BBQ’d Rabbit Haunches (Cooking for Loki)

I got some rabbit in my CSA this week.  I figure I’ll share what I did with them and ya’ll can nom and drool and try it if you ever get rabbit.

First: Made a dry rub out of sage, paprika, Clubhouse Montreal Chicken Spice, some garlic and onion powders, and salt.  Applied liberally to both sides of the haunch, and wrapped in saran wrap, and left in my fridge overnight until cooking time.

I took some garlic scapes, then blanched them a bit so they were more flexible, I then sliced them down so they made two long pieces of scape, then wrapped two halves around each haunch, THEN I wrapped each haunch in as much bacon as I possibly could (According to my husband’s buddy, it wasn’t enough bacon.. Loki agrees..but there is never enough bacon for  Him)

THEN, I turned on one side of my BBQ, indirect heat is the key for this meat to remain moist and not burned to a cinder due to the bacon grease flareups, so if you are using a charcoal grill, push all the coals to the side and leave an empty space and put an aluminum pie plate in the space. Indirect heat!

Keep the temperature around 400deg F.  and cook for about an hour, don’t turn! Leave it alone…

Near the end of the cooking time, that’s when you can use some direct heat to do a final crisp of the bacon and use some bbq sauce if you want.  I used Diana’s Smokey BBQ.

An Open Letter to Mrs. Paula Deen

Note:  I really doubt she’ll actually read this herself, but I have to get it out there.  By the way, this is my blog, and I have comments moderated, if you’re gonna spread haterade about me or Mrs. Dean, your comments will not be published.  *momstare*


Dear Mrs. Deen.

I have seen the controversy surrounding what you have said over 30 years ago.  I am pretty angry that they are crucifying you for something that should very well be dead and buried in the past.  I find it funny that people who live in glass houses are throwing stones the way that they are.

I’ll tell  you something.  I believe full on that you never were racist.  Me on the other hand…This is going to be difficult.  Even if you WERE racist, and were raised that way in the deep pre-civil rights era South, it is possible for people to change.  I know it, because *I* changed.

I used to run with the Neo-nazis.  That’s when the Gods that I followed, turned their backs on me, except one.  I don’t follow the Christian God that you do, Mrs. Deen, but, you’re a gracious enough lady to understand that it’s not what church we go to, that makes us.  You said that yourself on the interview you did on The Today Show. (  

Of course this isn’t a faith contest.  I’m a cook.  I LOVE to cook.  You were one of my inspirations when I was little!  Little Canadian Me, sitting and watching all these wonderful Southern dishes coming out of your was lovely!  Along with Julia Child, and James Barber, YOU were one of my inspirations, the one who ignited the love of cooking, in that young girl.  You taught me all about Comfort Food, how to make fried chicken, hoe cakes, grits, and collards.  I wouldn’t have known what Okra was, let alone how to cook it properly! (Don’t forget to deslime it, people!!!)

Anyway, when I was a young woman in my early 20’s I had some really bad things happen to me.  I was so full of hate and anger, and rage, that I had to direct it at SOMETHING, SOMEONE…so, I started dating this skinhead boy.  I started falling into that lifestyle of rage and hate…full on.  It wasn’t a good time in my life.  I really don’t want to get into details, they aren’t important. 

Well, what changed me, and trust me, it is possible for people to change out of the racist mindset!  I know you were never racist, but ‘mam,  but if you used to be, I would be a total hypocrite to not extend you grace, because *I* was.  *I* changed, because I fell pregnant with my daughter.  I realized that there was more to life than hatred, bigotry and race.  I did not want to raise my child in that lifestyle or environment, so *I* changed. I know if I didn’t fall pregnant I probably would be dead by now, or in prison, either or.

So whoever is reading this right now, be it some person from the blogosphere, or, even Mrs Deen herself, IT IS POSSIBLE TO CHANGE.  Racist people are able to change if they want to, I’m proof.   Leave the past in the past.  That’s where it belongs.  Mrs. Deen needs to be allowed to re-bury her skeletons.  We ALL have skeletons in our closets.

Remember, NO One is innocent.  Not you, not I, everyone has dirt.  Everyone has that dustbunny in the corner of their soul needing to be swept up and exposed.

The only way to clear these is to shed light on them.  Darkness and secrecy are self perpetuating.  Honesty and light, kill these things.  Mrs. Deen has BEEN honest, she opened her closet and said “Yes I have skeletons, who doesn’t?”, and just because she’s FAMOUS, does not give you the right to judge her over her skeletons.  She is human, like you and I.  

You know, when Rev Jackson and Mr Sharpton step up to tell people to back off of Mrs. Deen, you KNOW what she did wasn’t that offensive.  Get over it.

Food fit for the Gods. (tonight’s Noms!)

And Wonderful Noms are Had.

Tonight’s dinner was epic. We had Chicken Breasts with Dijon and tarragon cream sauce, with a side of angel hair pasta tossed in garlic scape pesto,
and a ceaser salad.

Dessert was a Strawberry shortcake.

Here are the recipes for that epic meal! HAIL LOKI! Muse of Noms and Kitchen stuffs… (“Hey, chicken breasts are on sale..ooh look what you’re getting
in your CSA order…let’s GOOGLE! OH YES THAT, and THAT, and ok, that will work”)

The Pesto:

1/4 cup of pine nuts

about 8 garlic scapes
roughly 1/2 cup of shredded swiss chard
Extra Virgin Olive Oil. Varied
pinch of salt
pinch of ground pepper

First I roasted the pine nuts in the oven, (picture) I then tossed them in my food processor with the garlic scapes (They are the tops of the hard neck variety of
garlic) and some swiss chard to mild out the bite, for the kids. I pulsed it until ground up,  Then I slowly drizzled in the olive oil until it made a nice thick paste. I put it in a container and refrigerated it until later

Cook the Angel Hair pasta as per package directions.




4 Boneless Skinless chicken breasts
4tbsp of Dijon mustard
2 tbsp of chopped fresh tarragon
2cups cream or milk.
1/2 cup of flour
salt and pepper to taste
a knob of butter

Preheat your pan over medium high heat and drop the butter into the pan.


Chicken in the pan!

Salt and pepper your chicken breasts, then dredge in flour then cook over medium high heat until cooked through.  



With the Dijon/Tarragon sauce!

(Internal Temp 160deg Farenheight at
Thickest part, maintain for 5 minutes FOOD SAFETY! *ding*) Set aside on a plate and tent with foil.

Take a generous knob of butter and put it in the pan, (Yes more butter.)  then, put some of the dredging flour that’s left over into the pan and make a roux! Should be the colour of pale peanut butter.

Then lower your pan’s heat to low, take your dijon, your tarragon, cream/milk and put in the pan, and simmer while scraping all the bits off the bottom
of the pan. Simmer until slightly thickened/reduced. (pic)

Put chicken back in pan to reheat back to the proper temperature..
Serve, with sauce over the chicken

Ceaser salad: I use storebought dressing. Not hard to make, rip lettuce, dump in bacon bits, croutons and parm cheese, toss with dressing. Meh

My whipped cream didn’t get very whipped but it was still tasty.

 I didn’t have a round cake pan but I had a square worked. I made some nutella whipped cream to go with it.

(And Loki is like HELL YEAHZ)

So yes, that is my epic mealtime supper. I try to do one really good meal a week or a month even..depending on the CSA box. 😀

It’s a Sicilian street food that is made out of Arborio rice cooked in chicken stock, mixed..ah the heck with it I’ll post the recipe down below.

Anyway, my husband had them when he was in Sicily during the whole Libya liberation thing.  (Please no anti-war stuff…)  He was like “I had THESE when I was in Sicily and they were SOOOOO GOOD.”  I somehow will have all the ingredients on hand to make them again…and I hear a “YES YES YES YES YES PLEASE”  not from my husband but from a certain Red Headed God who’s a massive foodie.

Anyway here’s my recipe


2 cups dry arborio rice, then you cook it as per package directions, substituting chicken stock for the water.  

1/2 cup of grated parmigiano-arrigiano

 2 eggs beaten

Now once the rice is cooked, cool it off, and then mix the cheese and eggs into it.


My sauce, is something I made from scratch..takes all day so here’s the recipe for that

Roughly 3-4lbs roma tomatoes, peeled and chopped (cut an X at the bottom blanche them in boiling water for 30 secs, dunk tomato in ice water…peel) 

1/2 a large white onion, chopped

about 6 or 7 cloves of garlic, smacked with a knife

3 sprigs of fresh oregano

3 sprigs of fresh marjoram

1 sprig of fresh rosemary

2 sprigs of fresh thyme

about 3 sprigs of fresh basil

(Remove the leaves from the stems and just dump directly in the sauce..don’t worry)

2 large bell peppers, seeded and chopped, I use both red and green. 

I add about 3-4 cups of water to this, bring to a boil and simmer it all day..until it’s all mushy. I then take a stick blender, and wizz everything nice and smooth if there are chunks (My family doesn’t like chunky pasta sauces)  I then add it to whatever cooked ground meat I have on hand and voila!  Ragu! (I HIGHLY suggest using spicy Italian sausage *nodnod*)

So the Assembly of the rice balls.

first, you fill a dish with Italian seasoned bread crumbs.  Then in another dish, you want an egg/milk mixture.  

First step, you wet your hand, then you put some rice (roughly 1/4 cup) in it, and flatten it, put 1tpbs of cooled meat sauce in the center…apply more rice until it makes a ball.. roll in egg, then in bread crumbs…you need to SMOOOSH the rice around the sauce pretty hard…so it sticks, then you need to be delicate when it comes to breading it.  Repeat until you have no more rice mixture left. They should be the size of an orange…so if they look HUGE no worries.

Now, I prefer using a deep fryer, but you can cook them in a pan or in the oven, makes no difference to me.  I deep fry them at 375 degrees until they’re brown and crispy. so around 5 minutes or so.  Oven, I suggest around a 450-475 deg F, spritz with olive oil and cook for about 20-25 minutes.  THE FILLING WILL BE MOLTEN HOT so be careful.

Ok, none of these are *my* recipes.  I DID however get some mutton in my CSA share this week.  Was completely lost as to what to do with it. So I googled..and googled..

This is what I got

Now I DID tweak the method a little, since I have a pizza stone.  I preheated my oven/stone to 500deg.  Then turned the broiler on and slapped the breads on the stone to cook.  Came out BEAUTIFUL.

Now on to the rice.  I used normal long grain because that’s all I had.  Feel free to use Basmati or Jasmine..
btw if you don’t know how to cook rice, you make me sad.

And here’s the final product!!!  Was sooo delish.  MOST of this was provided by my local CSA at  The mutton, cucumbers, rhubarb, onions…yeah all of that was from the CSA.  Nothing like eating exotic, locally!! HAHAH

More Food Porn

Ok Everyone!  I’m back.  I should blog more often but meh..I’ll blog when I wanna blog.

Today, I’ll share my recipe for mince pork pie..or as Quebequois call it “Tourtiere”

Here are the ingredients:


  • 5 slices of bacon, chopped (it’s the stuff in the pan)
  • 1lb of ground pork
  • 2 medium potatoes, washed and diced small
  • 2 medium leeks sliced
  • 1 medium onion minced
  • 2tbsp Clubhouse Montreal Chicken Spice
  • 2tsp Dried Thyme
  • 2tsp dried rosemary
  • 1tsp dried sage
  • *of course you CAN use Fresh and I fully encourage that, I didn’t have fresh so I used dried*
  • 1 heaping tablespoon of minced garlic…or 3 cloves minced give or take

Step 1:  Cook the chopped bacon in your skillet. Do so until it’s starting to get crisp.
Step 2:  Put the pork, garlic, leek, onion and spices into the pan with the bacon, mush it all up and cook until no longer pink and crumbled

While the pork is cooking, put your diced potatoes in the microwave for about 2 minutes to partially cook them.

Once the pork mixture is done put in a bowl with the potatoes, mix well and put in the freezer to cool off.


1 Cup Shortening/Lard/Coconut oil/ Whatever Solid Fat you choose to use, I don’t care.
2 1/4 cups of Pastry flour
1/2 tsp salt
ice water.

Now, you take a cold fork or pastry cutter, and blend the flour, fat and salt in a bowl until it looks all crumbly like..almost like coarse oatmeal.  Keep it cold.  then add the ice water bit by bit until it comes together to form a dough ball.  Don’t knead don’t use your hands..keep anything warm away..or it turns to crap, and you don’t get the nice light flaky pastry goodness.

Split the dough ball into 2 halves,  Roll out on a floured surface, put one half in a pie plate, dump the filling in, then put the other half on top.  Cut slits in.  Grab a pastry brush and brush beaten egg or fresh milk on top of the crust to give it a nice colour when it’s done cooking.

Stick in a 375deg F oven for about an hour.


Nommy Breakfast Tiem Farmshare style/CSA style

Yesterday, we got our first CSA/Farmshare delivery.

We got a bunch of goodies, like apples, and carrots.  We also got a couple of things people would find odd, and wouldn’t know what to do with.

Like Celeriac and purple fingerling potatoes.  Last night I made scalloped potatoes with celeriac and some normal looking potatoes, was meh.

Today, I still had a chunk of celeriac root ( Click here to see WTF I’m talking about ) left, so I decided to make, potato pancakes with a couple of the purple/blue fingerling potatoes, and the rest of the celeriac root.

Here’s the recipe for the potato pancakes:
You’ll need:
2 Purple fingerling potatoes (don’t bother peeling they’re like the whole ‘new’ potatoes with the super thin peel)   grated
 about 1/8 or so of a large chunk of celeriac root, peeled and grated
1 egg
1/4 or 1/2 cup of flour, depending how juicy the veggies are
2 tsp of baking powder
1tsp of dried thyme
1tsp black pepper
1/2 tsp of salt (or whatever you think is good)
Mix all this in a bowl.
Then Grab half of it, and put it in a hot greased pan (I used bacon grease because well bacon grease is good) smush it down into a pancake.  Grab the other half and repeat.  Cook on one side until set/brown then flip…cook until other side is brown, flip…cook for another 5 minutes or so…just flipping so each side doesn’t burn…so it’s all cooked inside.
I served mine topped with the alfalfa sprouts I got from the farmshare and a side of bacon.
Yeah they look kinda funky because of the purple potatoes, but they taste pretty damn good.

Oh and the scalloped potato recipe
3 medium potatoes scrubbed and sliced into rounds.
3/4 med/large celeriac root, sliced thin
2 cups milk
1/4 cup flour
garlic powder
1tsp rosemary (dried or fresh)
1/2 tsp salt
1/2 tsp pepper
Mix milk, flour and seasonings in a bowl
layer, potatoes, and celeriac in a casserole dish,  pour milk mixture over everything, cover and bake for about 45 minutes.  Remove cover, bake for another 15 til brown and bubbly.  Let sit for about 10 minutes before serving.
I didn’t get a picture of it before we ate it. Was kinda meh, needed more salt at the table for us.  Feel free to add bacon and cheese if you want.  Next time I’m gonna do that.


soft farmy warm farmy little ball of veg

I’m pretty stoked. This year we’re doing an “experiment” of sorts with a local CSA/Farm Share.  We locked ourselves into a 1 year commitment to a local farm/farms (They partner with a few other local farms so I guess it’s a farm co-op of sorts) to get fresh, local produce and meat delivered every week.

Everything is local, and mostly organic.  The meat is locally produced and humanely raised and slaughtered.  No factory BS there.  So, yes it is possible to be an omni Nomny  and still have ethics. Happy pigs make better bacon…

 There’s more than just the ol factory farm for meat and egg production.

AND, no GMO’s.  That makes my little TechnoHippy heart happy (no relation to TechnoViking let me tell you)

Local and in season meat and produce, I will most definitely be reviving the recipe portion of this blog.

Honestly,  I totally suggest my readers to look up CSA’s that are in your area.  Support your local farmers. Down with the factory farms and Monsantomongers.  You’ll get your moneys worth and more if you do that.  Your health will thank you and your local farmers will thank you.  If you live around the costal area, and like fish (We have some serious seafood allergies here) Talk to a local fisherman to see if you can buy a share of his catch.  Fresh right off the wharf.  You’ll probably get a better deal from him on a few lobster and some scallops than you would from Mr Highliner.

For those of you who reside in the rest of Canada,  the best way to find a CSA near you is to hit Google and type in “Community Supported Agriculture (insert your province or city/region here)  and there you go.


Enough of the political stuff…here’s some food

Pizza Lasagna!
1lb Mild Itallian Sausage (uncased, Johnsonville makes some)
1/2 Large White Onion (minced)
1Tbsp Clubhouse Italliano Seasoning blend (or whatever Itallian seasoning blend you have on hand)
1Tbsp Clubhouse Montreal Chicken Spice
4 cloves minced garlic
1tbsp butter
1 Can of your favorite tomato sauce (I use one that’s roasted garlic and herb flavoured)
Put diced onion in a large skillet, top with butter and 1tbsp of italliano seasoning.  
Cover and let steam until onion is soft.  
Remove cover, put sausage in, break up with spatula until crumbly, cover and steam a few minutes, until no longer pink. 
Remove Lid Add Chicken Spice and minced garlic, Move sausage/onions off to the sides of the pan making a well and let the fat accumulate in the middle of the pan and use a paper towel to mop out the fat (it’s safer than draining it into a jar IMO, drain fat however you want)  Add the tomato sauce, cover and simmer for about 10 minutes.
Before you add the tomato sauce into the Sausage/onion mix,  Dump it into a blender with some fresh kale, cooked sweet potato, green peppers (if you are not putting them in the lasagna proper) or whatever veg you know your family SHOULD eat, but won’t eat.  It’s a great way to sneak all sorts of green leafy goodness into very picky eaters.
While you’re throwing together your sauce, cook 12 lasagna noodles according to package direction (or however many that will create 3 layers in your lasagna pan)
Other Ingredients:
Pepperoni (about  12 slices per layer)
Salami (about 12 slices per layer)
If you like green peppers/onions/olives on your pizza, feel free to use those too, I can’t stand those tbh so I leave them kids don’t like em either.)
Shredded cheese of your choice.   I use Kraft’s Itallian blend.  It’s Stringy Mozzarella, Parm, Provalone and Edame I think…


In a greased Lasagna/casserole pan, start with a thin layer of sauce, Then noodles, then cheese, Then Pepperoni and salami, add more sauce, repeat.  The top layer should be: Noodles, Sauce, Cheese, Pepperoni.  In that order (for aesthetics tbh)

Bake covered in a 400deg F oven for 45 minutes.  Remove cover for 10 minutes for cheese to brown/bubble.  Remove from oven then let sit for another 10 minutes.


To those who say I don’t make healthy food

Today I went to the gym.  First time in about a year.  Why?  Because it took that bloody long for my husband to get me my gym membership.  See,  It’s a military gym,  so a military person has to sign up their dependants to use it.  Felt good to get back in the groove.  See, over a year I lost about 20lbs.  I want to get into a little bit better shape before I go for my surgery on the 21st of June (if that rapture shit is fake..which it is)  So most of my absence is me doing all the stuff needed to get ready for it.  Let’s just say, to put it delicately,  having two kids caused things to herniate down there.  Gyns like to call it a “Rectocele prolapse”  But really it’s a stupid hernia.  You know if you’re a guy and you have this ingual ring in the ball area where the balls came down when you were a kid?  sometimes it gets widened and the stuff goes in?  Well that’s kinda like what’s up with me. It’s annoying and I’m glad it’s finally getting fixed.  ANYWAY recipe time.

To those who said I had too many unhealthy recipes? BAH on you I say BAH!  Tonight I made the most delish salad IN THE WORLD
First I took a chicken breast,  Put it in a bag with a little Extra virgin olive oil, Rosemarry, sage and seasoned salt.  Let it sit for a bit, then put it on my george foreman grill because I haven’t dug my BBQ out of the garage yet.  I then cut up a honey crisp apple and diced up a quarter of it and put it on a bed of baby greens (ORGANIC baby greens) Then chopped up a bit of cucumber, and a few multi colored cherry tomatoes…and topped it with chopped walnuts.  It kinda looked like this:

I then took the chicken after it was cooked:
Chopped it all up and put it on top of the veggies
I then took THIS  dressing and drizzled it all over 
and the result was this:
There you go, a healthy supper.  Really tasty too.
